Corn 'n' Black Bean Salsa

We always say that we eat with our eyes. We know this is true because our tummies will sure be rumbling once we see how colorful this Corn 'n' Black Bean Salsa is.

Makes: 4 cups

Preparation Time: 12 min

What You'll Need:
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn kernels, thawed
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped fresh cilantro
  • 8 green onions, thinly sliced
  • 3 tablespoons lime juice
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
What To Do:
  1. Combine all ingredients. Cover and 1 chill at least 30 minutes.
     
  2. Store in refrigerator up to 3 days in an airtight container.
     
  3. Serve with tortilla chips.
Notes

To thaw frozen corn kernels, place them in a colander in the sink. While you're prepping the other ingredients, run warm water over corn until thawed.
