Easy Falafels

When you want something different to serve the gang, try this Middle Eastern treat that's super as a before dinner munchie or as a side dish. It's so full of the great Old World flavors that we still love today.

What You'll Need

  • 1 can (15 to 19 ounces) garbanzo beans (chick peas), drained
  • 1 cup dry bread crumbs
  • 2 eggs
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground cumin
  • 1/2 cup vegetable oil

What to Do

  1. Preheat the oven to 400 degree F.
     
  2. In a food processor, combine all the ingredients except the oil. Mix on medium-high speed until well blended.
     
  3. Shape the mixture into 1-1/2-inch balls and place 2 inches apart on a greased cookie sheet.
     
  4. Flatten the balls to about 1/2 inch thickness with the bottom of a heavy drinking glass. Brush the falafels with the oil and bake for 20 minutes, until golden brown on both sides, turning halfway through the baking.
     
Makes 20 pieces

Notes

Falafels are traditionally served in pita bread with chopped lettuce, tomato, and onion, and tahini, a sesame sauce that can usually be found ready-made in the ethnic foods section of the supermarket.
