Jalapeno Cheese Bites

Who would guess that beer is the secret ingredient to making our Jalapeno Cheese Bites? These spicy bite-sized potluck appetizers are sure to wake up sleepy taste buds!

What You'll Need:
  • 1 cup reduced-fat all-purpose baking mix
  • 1/2 cup shredded reduced-fat Monterey Jack cheese
  • 2 tablespoons chopped roasted red peppers
  • 1 tablespoon chopped mild jalapeno peppers (from a 12-ounce jar)
  • 1/4 teaspoon salt
  • 1/3 cup light beer
What To Do:
  1. Preheat oven to 450 degrees F. Coat a rimmed baking sheet with cooking spray.
     
  2. In a medium bowl, combine all ingredients except the beer; mix well. Stir in beer and let sit 5 minutes.
     
  3. Drop by teaspoonfuls onto prepared baking sheet.
     
  4. Bake 7 to 10 minutes, or until golden. Serve hot.
     
Note
  • These bites are perfect for company, so why not make up a batch or two ahead of time so you can simply rewarm them in a 200 degree F oven before serving.

Are these made with sweet red peppers or hot red peppers?????????

Double the receipe because you will be eating them as you take them out of the oven! They are DELICIOUS!!! :)

Why reduced fat baking mix? Just curious...

I know these are going to be a hit with friend! And more so with the hubby!

What can I use instead of light beer in this recipe for someone that is gluten intolerant? I know I can use gluten free flour.

What can be used instead of beer?

I have not tried this, but one online site said that ginger ale could be used instead of a light beer. There are also non-alcoholic beers that one could try if it's the alcohol content that is of concern. Hope this helps. If you try ginger ale, I hope you'll let all of us know if it worked.

One cup of Bisquick can be substituted by a mix of one cup of flour, 1 teaspoons of baking powder, teaspoon of salt, and 1 tablespoon of oil or melted butter.What do you think?

Would you be able to use just flour? To me the Bisquick makes buns, bread, etc: just too dry.

All purpose baking mix is like Bisquick...works for many many types of dishes.
