Nutty Cheese Crackers

This is a lot of good tastes rolled into one, making great use of a Southern specialty: pecans!

What You'll Need

  • 2 cups (8 ounces) shredded sharp Cheddar cheese
  • 1 cup self-rising flour
  • 3/4 cup finely chopped pecans
  • 1/2 cup (1 stick) butter, softened
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

What to Do

  1. In a medium-sized bowl, combine all the ingredients.

  2. Using your hands, knead well until a soft dough forms. Shape into an 8-inch log about 2 inches in diameter. Wrap tightly in plastic wrap and chill for about 30 minutes, until firm.

  3. Preheat the oven to 350 degree F. Unwrap and cut the log into 1/4-inch slices and place on a rimmed baking sheet that has been coated with nonstick cooking spray.

  4. Bake for 20 to 25 minutes, or until golden. Let stand for 5 minutes before removing from the baking sheet.

  5. Serve warm, or allow to cool completely then store in an airtight container until ready to serve.

    Makes about 2 dozen.

I haven't made this yet, but plan too. I don't find any hamburger in the recipe as stated in a posting below. The instructions don't look any different than making refrigerator cookies. I don't understand using a PV pipe.

I couldn't even understand it. How can I consider it helpful

HINT FROM KAG I go to the hardware store that sells PVC pipe and have them cut me four fifteen inch long pieces that are two inches in diamiter round while there buy a - inch round dowel they come inches long leave it that lenghth I bought a baby bottle brush to cleam them on the inside or just stick you dish cloth into it and use handle of long utinsel to move the cloth up and down WASH THE PVE WITH SOAP AN WATER BEFORE USING AND DRY WELL I put oil just a little lightly to just oil the inside lightly so they wont stick use a sheet of paper towel with small amount of oil on it use the dowel pus it through pipe I put my dough into a large pipeing bag or baggie and cut the corner big enought to squeeze it out i fRead More you need to use the dowel to push the dough down so you have more room to fill When filled i put the dough filled pipe in in frig over night to chill or at least several hours I lay plastic wrap on counter big enough to wrap the log of dough after out of pipe and push the dough onto it I wap up some plastic wrap and lay it on one end of pipe full of dogh ten put the dowel against it to keep from getting it sticky and push the dough through I have had no trouble getting this to work for me as long as dough is cold then when out you can wrap an freeze it for latter use or slice and bake

Why not simply roll into a log and put in refrigerator till it gets cold and easy to slice? simply follow the EASY DIRECTIONS no need for pipes dowel rods piping bags and bottle brushes I got tired just reading all the steps to make this simple recipe ...can also cook the ground beef first and add some shredded cheese before rollling I like to add a little garlic powder and some chopped mushrooms and brush the top with beaten egg before baking
