Tortilla Stack

Any recipe from south of the border seems to be popular now, and there's no exception when it comes to our delicious and colorful Tortilla Stack. This simple Mexican-style recipe will turn an ordinary meal into a fiesta.

What You'll Need:
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 5 (8-inch) flour tortillas
  • 1 cup guacamole
  • 2 cups Mexican four-cheese blend, divided
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 9-inch round cake pan with cooking spray.

  2. In a medium bowl, combine black beans, salsa, chili powder, and cumin; mix well.

  3. Place 1 tortilla in prepared pan and spread with half the bean mixture; top with another tortilla. Spread with guacamole and top with another tortilla. Sprinkle with 1 cup cheese and top with another tortilla. Spread with remaining bean mixture and top with remaining tortilla.
  4. Cover and bake 30 minutes. Uncover and sprinkle with remaining cheese. Bake 3 to 5 more minutes, or until cheese is melted. Cut into wedges and serve immediately.

We like to top these with sour cream and additional salsa. And to add to the festivities, why not make up a batch of our delicious Jalapeno Poppers!

I'm going to try this.. not sure about the guacamole being hot, but I have eaten a hot guacamole dip with jalapenos so this may be good. )

Does anyone else think that cooking the guacamole sounds weird? I just don't think I'd like hot guac. How about serving it on the side or with a dollop on top of each serving? And add the ground beef as others have suggested as the layer instead of guacamole. Sounds delicious.

I also like these other verisions

I would use the ground beef layer like JanCanCook, but I would mix it with the taco seasoning. Now, this recipe looks delicious, BUT how do you get it out of the cake pan onto a plate?

I actually make it with ground beef (instread of black beans), complete with all the toppings, shredded lettuce, chopped tomatoes, sliced ripe olives, jalapeno peppers sliced, mexican blend shredded cheese on top.... & it's our evening meal.

Great idea, this is exactly what I had in mind while I was reading the original recipe.

I use some minced beef and a little garlic along with a 1/2 tin of beans, it is really good, thank you. I have also shared a recipe ar eat, cook,share, which I named tortillas with a difference..

yumm ... I think I'll try your recipe except Im going to use deep fried corn tortillas instead of flour ... more like a Tostada ....

A bit of shredded rotisserie chicken might be nice, as well.

I actually don't care for black beans but found this recipe to be quite good. I would substitute corn tortillas, as the flour ones tend to become slimy and gummy.

I presume the recipe is for 8 "inch" tortillas, not 8 "ounce"
