Hillbilly One Pot

Take your taste buds to the backwoods, country-style way of cooking and rustle up our hearty Hillbilly One Pot. Made from a load of fresh ingredients, this one is down-home special!

What You'll Need:
  • 1 1/2 pounds ground beef
  • 4 cups beef broth
  • 3 (15.5-ounce) cans black eyed peas, not drained
  • 3 potatoes, peeled, diced
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 3/4 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
What To Do:
  1. In a soup pot over medium heat, saute ground beef 5 to 6 minutes, or until browned. Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer 30 to 35 minutes, or until potatoes are fork-tender.

Love this recipe because there are countless variations! I reduced the recipe by 1/3 because it was for two people. Used one can blacked peas and one can pinto beans. Going to use it tonight and substitute rice for potatoes and am confident it will be great! My wife and I are "empty nesters" so any recipes that work for two people are greatly appreciated! This one warms over great!

Forget the rolls! Any self-respecting Hillbilly knows you got to have cornbread with this meal. We prefer yellow cornmeal here. As for the black-eyed peas, we will try them once. If they don't fly, I'll substitute with beans. Black, red, or pinto. Also, we like garlic powder and Worcestershire sauce for seasoning along with the smoked paprika and s&p.

agree about the cornbread..can't wait to make this using black eyed peas AND black beans cause we love both!!!

Hi Elaine! You can substitute black eyed peas with any beans, like pinto, cannellini, or even kidney beans.

I think that pintos would be delicious. I dislike black eyed peas as well.

just a suggestionfrozen black eyed peas are so much better than canned, and really don't take all that long to cook

Instead of ground beef I used ground pork and used Cannelli beans, another success! Love it.

You may need to look elsewhere in the grocery peas are not with beans


I live in the South, and we do have black eyed peas, that are indeed peas, and not black beans. The beans, and peas have totally different flavors. Being an Arkansas hillbilly, I would prefer the black eyed PEAS, over black beans.

don't have smoked paprika. will regular paprika work?

Would you substitute bacon with fried pork in a recipe? Using non-smoked paprika will change the flavor quite a bit.

just love a good bean soup. I usually add some potato bus or flakes just to thicken a little. It doesn't change the tast, cause ur using potatoes anyway.

Black eyed peas are not the same as black beans. If you would like to substitute another bean, you can. Just be aware that sometimes canned black beans are seasoned and you do not want that. You can also use pinto beans if you prefer. Thank you!

The black-eyed pea or black-eyed bean, a legume, is a subspecies of the cowpea and not a bean per se.

I made the Hillbilly One Pot and loved it! I changed it up a little. I didn't have any black eyed peas, so I used other beans that I had in the cupboard. White, pink and black beans. I added more carrots and celery and used ground turkey. I found I needed a little more flavor, so I added 1/2 tsp of cumin. It came out a little soupy, which was fine. I had some nice bread to go with it. I froze half of the meal to have at another time. I'll be making it again that is for sure.

I'd like to try this but am wondering if I could freeze portions for later meals. Looks like a winner for winter suppers. Can anyone tell me about the freezing?

Great question! Absolutely you can freeze portions for another day. Let it cool, place portions in freezer-safe containers and freeze. When you are ready, just thaw and heat. Enjoy!

I tried this recipe and it was delicious. Even my picky husband liked it. I will have to cut the recipe in half when I make it again though, because it simply made too much for us, even with eating leftovers.

Nice warm hearty meal. Added some Cavender's All-purpose seasoning to it and it was delicious.

I just opened this and saw this recipe and for sure I will try looks YUMMY and sounds YUMMY as well. A must try. We can find all the ingredients here in Chiang Mai, Thailand.

I agree with Irwind4515..........., as I've stated before these recipes are wonderful and chronic complainers ought to really be more appreciative for such a wonderful site. Can't we just learn to be more gracious treating each other with more respect and appreciation? Instead of micro-managing everything? I believe your blood pressure, sugar level, and headahces would naturally disappear, if you'd just drop the stick!

I get very frustrated when I constantly see individuals wanting "Nutritional Values" on recipes. This is definitely a good recipe, lots of fiber (legumes--black eyed peas), veggies, etc. Portion control is key to any nutritional value, but I decided I would share 3 Websites for all these folks who feel they NEED nutrional values on their recipes.... So here goes. 1) 2) 3) Now if these sites don't offer what you need, try the ASK, GOOGLE, or any of the many other search engines ... OR .... Try visiting your local library. Sorry, but these folks are providing "delicious" recipes -- They are not providing your daily food pyramid and nutitional indeces.

I like to add 3 different kind of can beans. What every you like, but I like to drained and rinse the beans unless I use beans in a sauce(pork & bean, baked bean or chili bean with no meat) Kind like calico beans

I brought the ingredients for this new recipe, along with my stew pot, packed them in the car and headed to my mother-in-law's house for our large family gathering. It was a cold Vermont day with fresh snowfall. The kids had been sledding. It wasn't quite time for our celebrated Christmas dinner so I decided to whip up the Hillbilly One Pot. Everyone loved the name, and the taste! It was a HUGE hit. And I was happy to learn that I don't mind black eyed peas. I actually like them. This was an easy recipe to follow. I wouldn't change a thing.

I enjoyed this meal. I bought the celery, carrots, and onions already pre-cut, which made the prep time easier. I added crushed red pepper and garlic powder to add more seasonings. Ate it with pull apart rolls and it was delicious.

Was a very good recipe, was just a little bland so i put a little mccormick vegetable seasoning gave it a very good taste

I know it says "one pot" but you might want to brown the ground beef up in a skillet first and drain the grease off. There is an awful lot of grease in a pound and a half of regular ground beef and I'm afraid it would ruin the meal. My dad would have loved this recipe...but he would of had to have some cornbread with it to sop up the gravy .

but save the brown crusty bits when you drain the grease...they are very flavorful.

I make something similar. Use rice instead of potatoes, bell peppers, diced tomatoes... smoked sausage instead of hamburger. Served up with cornbread. Will try this as well.

I didn't realize this was Hillbilly one-pot. We called it hamburger stew! No black-eyed peas though, we used pinto beans instead. Add garlic powder, bacon-flavored smoked salt, and Worcestershire sauce to taste. Also, ditch the rolls and bake up some yellow cornbread! Now you're talkin'! Yum!

Black-eyed peas have a weird dusty taste to me. I'd go with the red or black beans and rice, plus plenty of onions and green pepper and a dash of cumin.

I'm thinking red kidney beans (or black beans) & rice instead of black-eyed peas & potatoes, with some cajun seasoning...BAM!

I HATE blackeyed peas,what would be a good substitute? Pintos,navy beans? Otherwise this sounds easy and filling for a crowd!!

Yes, those would make just as good stew, u might a tablespoon of bacon grease as a flavor enhancer, can use canned taters or mixed veggie, onions, garlic

I'm having this for dinner tonight-it sounds very tasty! I'll make a couple of minor changes. I'll saute onions and green pepper along with the ground beef, and add a pinch of red pepper flakes. Now we're talkin'!!
