Roll up something tasty with our recipe for Mediterranean Beef Roll-Ups! We marinate thinly cut steak in flavorful Greek dressing before rolling it up with fresh spinach and creamy feta cheese. The results are so delicious! 

What You'll Need

  • 4 thin-cut top sirloin steaks (about 1-1/4 pounds total)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach
  • 1/2 cup crumbled feta cheese
  • 3/4 cup Greek salad dressing
  • 1 tablespoon olive oil

What to Do

  1. Evenly sprinkle steaks with garlic powder, salt, and pepper. Top evenly with spinach and feta cheese. Roll up and place a toothpick in center of each to secure.
  2. Place roll-ups in a shallow dish. Pour dressing evenly over roll-ups and let marinate 10 minutes.
  3. In a large skillet over medium heat, heat oil until hot. Remove roll-ups from marinade, reserving marinade, and cook beef roll-ups 5 to 6 minutes, or until browned on all sides, turning partway through cooking. Reduce heat to low, add marinade to skillet, cover, and simmer 20 to 25 minutes, or until beef is fork-tender. Remove toothpicks, slice roll-ups, and serve.

I would've never thought of doing something like this on my own, but I'm glad I tried it. There's so much flavor in these and it's really not that difficult to put together. I'd make it again for dinner.
