Roast Beef "Crepes"

Why settle for cold sandwiches again when we can use deli roast beef to make these tasty roll-ups? They're just mashed potatoes and mixed veggies wrapped in a tasty piece of roast beef and topped with gravy. Sounds pretty comforting (and hassle-free), doesn't it?

Serves: 4

Cooking Time: 15 min

What You'll Need:
  • 2 cups warm prepared mashed potatoes
  • 1 (15-ounce) can mixed vegetables, drained
  • 8 thick slices deli roast beef (about 1¼ pounds)
  • 1 (12-ounce) jar beef gravy
  • 1/2 cup water
What To Do:
  1. In a medium bowl, combine the mashed potatoes and mixed vegetables; mix well. Place an equal amount of the mixture at one end of each roast beef slice; roll up crepe-style.

  2. In a large deep skillet, combine the gravy and water over medium heat until bubbly. Add the beef rolls seam side down, cover, and simmer for 10 to 15 minutes, or until heated through. Serve with the gravy spooned over the top of the rolls.
Notes

This is already an all-in-one meal, but you might want to start dinner with a Caesar salad and some warm rolls to fill it out.
