Whoever thought making a homemade meatloaf recipe could be this simple? Our Skillet Meatloaf is not your average recipe from Grandma's old cookbook. We've converted this old-fashioned favorite to the stovetop, and boy, are we pleased with the results! Instead of waiting for the oven to preheat and for the loaf pan to cook, get dinner on the table in a snap with this ground beef skillet recipe.

What You'll Need

  • 1 pound ground beef
  • 1/2 cup stuffing mix
  • 1 small onion, finely chopped
  • 1 egg
  • 1 (10-3/4-ounce) can condensed Italian tomato soup, divided
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1/4 cup water

What to Do

  1. In a large bowl, combine the beef, stuffing mix, onion, egg, 1/4 cup soup, and salt; mix well. Shape into four oval patties about 1/2-inch thick.
  2. Heat the oil in a medium skillet over medium heat. Add the patties and brown on both sides; drain if necessary.
  3. Stir the water into the remaining soup and pour over the patties. Reduce the heat to medium-low, cover, and cook 15 to 20 minutes, or until no pink remains in the beef, stirring the sauce occasionally.

Do you make the stuffing as directed or just dry?

Hi there! You use the stuffing mix dry and add it in step 1. Enjoy!

I'm going to follow Catlady's advice and use mushroom soup - having lost my sense of taste and having it return all goofy, I can't handle the taste of anything tomato! I am so looking forward to making this!

This recipe sounded good, but I used Cream of Mushroom Soup, instead of Tomato Soup. I added some minced garlic and freshly minced parsley....so I'm only rating my own recipe. I had "Stove Top" Chicken Stuffing Mix on hand, so I used that. After I placed everything on the serving platter, I sprinkled some freshly minced Italian Parsley over it all. It looked and tasted phenominal! I doubled the recipe, since I served it to our guests....along with Garlic Mashed Potatoes and a nice tossed Italian Salad. Everyone raved about this meal. I can't (however) take the credit for the delicious Cannoli which my guest (Maria) brought over for dessert. They were 'delicioso'! Thanks, Maria.

TEXASIZE THIS, use a dry Taco mix, Rotel(yr favor) or japs, dry onion soup mix, dry spaghetti mix, spaghetti sauce, anycombination, choices r endless

You can always add garlic. Garlic always adds extra flavor or even Italian seasoning but you are using Italian tomato soup.......Be creative....You don't always have to follow the recipe exactly......

Sounds reasonable, but I wonder about the sage flavoring that is usually in stuffing mix. Anybody make this? I can't post this without a rating, so I will just choose three stars.

Using stuffing mix with sage should not stop you. I make my meatloaf all the time in oven adding sage. Been adding it for 35 years, so far so good. Don't usually use stuffing mix though. My first time with this.

I often make my meatloaf's with stove top stuffing mix, have for years now, plus I add a lot more items along with mine is always a hit with my family, can't go wrong here ) Annette

So doctor it up like BicycleBen! Be creative and use your own spices!
