Sweet and Sour Beef Brisket

A little sweet, a little sour, all delicious! And convenient too, 'cause you can make it up to 4 or 5 days in advance.

Serves: 10

Cooking Time: 3 hr 30 min

Ingredients
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1 garlic clove, minced
  • 1 tablespoon paprika
  • 1 6- to 7-pound beef brisket, trimmed
  • 1/3 cup firmly packed brown sugar
  • 2 tablespoons white vinegar
  • 1/2 cup ketchup
  • 1 onion, thinly sliced
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Combine salt, pepper, garlic, and paprika. Rub brisket all over with mixture and place fat side up in a roasting pan. 
     
  3. Mix brown sugar, vinegar, and ketchup in a small bowl; pour over brisket. Lay onion slices on top of meat. Cover with foil and bake 3 to 3-1/2 hours, or until tender.
     
  4. Slice brisket diagonally across grain into thin slices, pour pan juices over, and serve.
     
Notes

If you wish to serve at a later date, you can store the cooked brisket in the refrigerator for up to 4 or 5 days. Just be sure to let the meat cool slightly before refrigerating. Before serving, cover meat with foil and place in a 350 degree oven for 45 minutes or until heated through.
