Cheaters Beaten Biscuits

Old- timers beat their biscuit dough 30 to 45 minutes with a rolling pin to achieve the characteristic texture of these crisp little biscuits. But we traded in our rolling pins for a food processor, and the job's done in a flash! These biscuits with flaky layers split naturally to form perfect pockets for your choice of partners.

Makes: 2 dozen biscuits

Cooking Time: 20 min

What You'll Need:
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1/2 cup cold butter, cut into small pieces
  • 1/3 cup ice water
What To Do:
  1. Preheat the oven to 400 degrees. Position knife blade in food processor bowl; add flour and salt. Process seconds; add butter, and process 10 seconds or until mixture is crumbly.
     
  2. Pour water through food chute with processor running; process until mixture forms a ball. Turn dough out onto a lightly floured surface. Roll dough into a 1/8-inch-thick rectangle. Fold dough in half lengthwise; cut with a 1-inch biscuit cutter. Place on an ungreased baking sheet. Prick top of each biscuit with a fork 3 times. Bake 20 minutes or until lightly browned.
