Cheddar Drop Biscuits

Ingredients
  • 2 cups low-fat biscuit baking mix
  • 1/2 cup (2 ounces) shredded reduced-fat sharp Cheddar cheese
  • 3/4 cup fat-free milk
  • Nonstick cooking spray
  • 2 tablespoons light stick butter, melted
  • 1/2 teaspoon dried parsley, crushed
  • 1/4 teaspoon garlic powder
Instructions
  1. Preheat the oven to 450 degrees. Combine baking mix and cheese; make a well in center of mixture. Add milk, stirring just until moist.
     
  2. Drop dough by rounded tablespoonfuls 2 inches apart onto a baking sheet coated with nonstick cooking spray. Bake 8 minutes or until golden.
     
  3. Combine butter, parsley, and garlic powder; brush over warm biscuits.

Notes

Due to the higher proportion of liquid to the dry ingredients, drop biscuits have a thick batter instead of a soft dough like that of rolled biscuits?which is why they're dropped instead of kneaded and rolled. And because they're dropped, these biscuits take a lot less time to prepare than the rolled variety.
