Cheese Biscuits

Serve these up for breakfast, lunch, even dinner. I mean, how can we go wrong when we combine Cheddar cheese with our favorite biscuit dough?

Cooking Time: 20 min

Ingredients
  • 2 cups self-rising flour, plus more for rolling out
  • 1/2 cup (2 ounces) shredded sharp Cheddar cheese
  • 2 tablespoons sugar
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup vegetable shortening
  • 2/3 cup buttermilk
Instructions
  1. Preheat the oven to 425°F. In a large bowl, combine the flour, cheese, sugar, and cayenne pepper; mix well. Using a fork or pastry cutter, cut the shortening into the flour mixture until crumbly. Add the buttermilk and stir until a dough forms.

  2. Knead the dough on a lightly floured board until smooth. Roll out the dough with a rolling pin to 1/4 inch thick and cut into 2-inch round biscuits.

  3. Place on rimmed baking sheets that have been coated with nonstick cooking spray and bake for 10 to 12 minutes, or until light golden. Remove to a wire rack to cool completely.
    Makes about 2 dozen. 
Notes

I sometimes like to add a little more cayenne pepper to give these an extra-spicy kick.
