Corn Bread Pudding

A bit different from traditional corn bread, this Corn Bread Pudding is rich and spoonable, with a hint of sweetness.

Serves: 6

Cooking Time: 45 min

Ingredients
  • 1 (15-ounce) can cream-style corn
  • 2 cups self-rising cornmeal
  • 2 cups heavy cream
  • 1/3 cup sugar
  • 1/4 cup (1/2 stick) butter, melted
Instructions
  1. Preheat oven to 350 degrees F.  Coat an 8-inch square baking dish with cooking spray.
     
  2. In a medium bowl, combine all ingredients and stir until well blended then pour mixture into prepared baking dish.
     
  3. Bake 45 to 50 minutes, or until golden around the edges.
     
Note

Since this Corn Bread Pudding is sweeter and looser than traditional corn bread, we suggest using an ice cream scoop to serve it.
