Florentine Bread Roll

Ahh, Florence - many say it's the most romantic of Italian cities. Well, I can't promise that this bread roll stuffed with spinach, cheese and seasonings will improve your love life, but it could be the start of a very romantic dinner for two!

Cooking Time: 12 min

What You'll Need:
  • 1 tablespoon olive oil
  • 1 (10-ounce) package frozen chopped spinach, thawed and well drained
  • 4 garlic cloves, minced
  • 1 cup ricotta cheese
  • 1 cup (4 ounces) shredded mozzarella cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 (10-ounce) package refrigerated pizza dough
What To Do:
  1. Preheat the oven to 425 degree F. In a large skillet, heat the oil over medium-high heat. Add the spinach and garlic and sauté for 3 to 5 minutes, or until the garlic is golden. Remove from the heat and allow to cool slightly.

  2. In a large bowl, combine the ricotta and mozzarella cheeses, the oregano, and salt. Add the spinach mixture and stir until well blended.

  3. Unroll the pizza dough and with your fingertips or the heel of your hand, spread the dough out to a 10" x 15" rectangle. Cut in half lengthwise to make two 5" x 15" rectangles. Spread half of the spinach mixture onto each piece of dough, leaving a 1/2-inch border around the edge.

  4. Fold each piece of dough over and pinch the edges to seal securely. With a sharp knife, score the dough across the top every 2 inches and place on a baking sheet that has been coated with nonstick cooking spray. Bake for 10 to 12 minutes, or until golden brown.
