Honey Jalapeno Corn Bread

Oh boy, are you gonna love this Honey Jalapeno Corn Bread! It's sweet and spicy and "OOH IT'S SO GOOD!!"

Serves: 9

Cooking Time: 40 min

Ingredients
  • 1 jalapeno, seeded and finely chopped
  • 3 cups cornmeal
  • 1 cup all-purpose flour
  • 2 cups milk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons salt
  • 2 tablespoons honey
Instructions
  1. Preheat oven to 450 degrees F. Coat an 8-inch square baking dish with cooking spray. 
     
  2. In a large bowl, combine all ingredients; mix well. Pour batter into prepared baking dish.
     
  3. Bake 30 to 35 minutes, or until golden and a wooden toothpick inserted in center comes out clean. Brush with honey, cut and serve warm, or allow to cool before serving.
Notes

If you have a large cast iron skillet and would like to make crispy corn bread, place 1/3 cup vegetable oil in the skillet and heat in a 450 degree F oven until hot. Remove from the oven and pour the batter over the hot oil. Return the skillet to the oven and bake as above.
