Spicy Carrot Muffins

Muffins are "in." They make a great snack all by themselves or a tasty addition to any meal. Either way, you'll feel great giving your family some homemade goodness.

Serves: 24

Cooking Time: 25 min

Ingredients
  • 2 cups, all-purpose flour
  • 1 1/4 cups packed brown sugar
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups shredded carrots
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans or walnuts
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • Granulated sugar for topping
Instructions
  1. Preheat the oven to 375°F.

  2. In a large bowl, combine the flour, brown sugar, pumpkin pie spice, baking soda, and salt.

  3. In a separate large bowl, combine the remaining ingredients, except granulated sugar; mix well.

  4. Add the carrot mixture to the flour mixture, stirring until moistened.

  5. Line 24 muffin cups with paper baking cups; spoon the mixture into the cups. Sprinkle the tops with granulated sugar.

  6. Bake for 18 to 20 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from the pans and cool on wire racks.

Notes

Serve with butter, margarine, or cream cheese...whatever!
