Zucchini Corn Bread Pie

Get a serving of tasty veggies in this comforting Zucchini Corn Bread Pie. Our Test Kitchen team outdid themselves creating this super go-along to enjoy with main dish favorites like stew, chili and more!

What You'll Need:
  • 2 medium zucchini, quartered and thinly sliced
  • 1 small onion, chopped
  • 1/2 cup evaporated skim milk
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 (8.5-ounce) package cornbread & muffin mix
  • 1/2 cup reduced-fat finely shredded sharp Cheddar cheese, divided
What To Do:
  1. Preheat oven to 375 degrees F. Coat a 9-inch deep dish pie plate with cooking spray. Coat a skillet with cooking spray.
  2. Heat skillet to medium heat. Saute zucchini and onion 3 to 4 minutes, or until zucchini is crisp-tender; set aside.
  3. In a large bowl, beat together evaporated milk, eggs, and salt. Stir in muffin mix just until combined. Add zucchini mixture and 1/4 cup cheese; mix well, then pour into prepared pie plate and sprinkle with remaining cheese.
  4. Bake 25 to 30 minutes, or until golden and a toothpick inserted in center comes out clean. Cut into wedges and serve.

Why do you write a recipe using "2 medium" something? My idea of medium might be different from yours. Why not use "2 cups" or something totally measurable? Would make things much easier.

Hello! We refer to sizes of veggie/fruit instead of cup amount because we get a lot of requests from folks with questions like, "How many do I have to buy to make 2 cups?" We find that letting people know exactly how many of the veggie/fruit is needed is easier for most people. We understand that our idea of medium may be different from yours, so we suggest comparing the veggie/fruit to other of the same kind in your store and selecting one that is average-sized to be your medium. how about "2 cups" (approximately 2 medium)

I used Egg Beaters in this to reduce the fat even more so and it still turned out great! Thanks for the recipe Mr. Food!

My Dad used to make Zuchinni Nut Bread it was wonderful hot or cold. Sadly he never told us or wrote down the recip, we looked everywhere to no luck. I hope someone might be familiar with this recipe and can help me to re-create this wonder bread for my grandchildren. Thanks, Cathy

I made this for the 2nd time today, this time I found a zucchini for the recipe - excellent.

I couldn't find any zucchini, so I found some summer squash , so I used that and fat free half and half instead of the evaporated milk. It turned out pretty good.
