Want to make your family feel pampered? Well, it's a snap to do with Bananas Foster Crunch Cake, an easy-as-can-be special dessert.

Cooking Time: 45 min

What You'll Need:
  • 1/2 cup (1 stick) butter, softened
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 3/4 cups mashed ripe banana (about 4 bananas)
  • 1/4 cup light or dark rum
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, divided
  • 3/4 cup cornmeal
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup chopped pecans
  • 1/4 cup packed brown sugar
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 12-cup Bundt pan with cooking spray.
     
  2. In a large bowl, beat together butter and sugar until crumbly. Add eggs, one at a time, beating well after each addition. Mix in bananas, rum, and vanilla extract.
     
  3. In a separate bowl, combine 1-1//2 cups flour, the cornmeal, baking powder, baking soda, and salt; blend well. Add flour mixture to butter mixture and stir just until blended. Pour mixture into prepared Bundt pan.
     
  4. In a small bowl, combine remaining ingredients to make streusel topping. Sprinkle top of cake batter with streusel topping.
     
  5. Bake 45 to 55 minutes, or until a toothpick inserted in center comes out clean. Cool 10 to 15 minutes. To remove cake from pan, first loosen sides, then invert onto a serving tray, and remove pan.
