Easy Peach Fancy

This freezes well, so it's a great make-ahead--but you might want to make extra because they'll gobble it up before you can get it into the freezer!

Serves: 6

Cooking Time: 1 hr 5 min

What You'll Need:
  • 1 cup sugar
  • 1/2 cup (1 stick) butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 to 3 peaches, halved and pitted
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground cinnamon
What To Do:
  1. Preheat oven to 350 degrees F. Coat an 8-inch square baking pan with cooking spray.
     
  2. In a large bowl, cream together sugar and butter. Add flour, baking powder, and eggs; beat well. (Batter will be thick.)
     
  3. Spread batter into prepared baking pan. Cover with peach halves, skin side up, so that they are just touching (do not crowd). Sprinkle peaches with lemon juice, then sprinkle with sugar and cinnamon.
     
  4. Bake about 1 hour or until golden. Remove from oven and cool on a rack. Serve warm or cold.
     
Notes

You can use nectarines or plums instead of peaches, or even try a combination. You may want to serve this at room temperature or reheated.
