"In the Can" Cake

How about serving this with some reduced-fat cream cheese? Mmmm!

Cooking Time: 1 hr

Ingredients
  • 1 cup water
  • 2 tablespoons instant coffee granules
  • 1/2 cup raisins
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 3 1/2 tablespoons butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/8 teaspoon ground cinnamon
  • 2 cups whole wheat flour
Instructions
  1. Preheat oven to 350 degrees F. Coat two clean coffee cans with cooking spray.
     
  2. In a small saucepan, combine water, coffee, raisins, and baking soda over medium-high heat. Bring to a boil and cook 2 minutes, stirring constantly. Remove from heat and allow to cool.
     
  3. In a medium bowl, cream sugar and butter. Add vanilla, egg, and cinnamon. Alternately stir in flour and cooled raisin mixture, mixing well.
     
  4. Divide batter evenly between two coffee cans. Place both cans on a baking sheet and bake 50 to 55 minutes, or until a wooden toothpick inserted in center comes out clean. Let cool 15 minutes.
     
  5. Remove from cans by opening bottoms with a can opener and carefully pushing cakes out tops of cans. Cut into round slices and serve.
