The King's Cake

This salute to Elvis Presley's favorite food combo, peanut butter and bananas, truly takes the cake! Bake it up any time you want to enjoy a rich-tasting cake that'll make your gang feel like royalty!

What You'll Need:
  • 1 cup granulated sugar
  • 1/2 cup vegetable shortening
  • 2 eggs
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mashed banana (about 3 ripe bananas)
  • 2 teaspoons vanilla extract, divided
  • 4 ounces cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 6 tablespoons butter, softened
  • 3 cups confectioners' sugar
  • 1/4 cup chopped peanuts
What To Do:
  1. Preheat oven to 350 degrees F. Coat two 8-inch cake pans with cooking spray.
     
  2. In a large bowl, cream the granulated sugar and shortening until light and fluffy. Add eggs and beat thoroughly. Gradually blend in baking soda, flour, and salt. Beat in mashed banana and 1 teaspoon vanilla until thoroughly combined. Pour mixture into prepared cake pans. 
     
  3. Bake 25 to 30 minutes, or until a wooden toothpick inserted in center comes out clean. Let sit 5 minutes, then remove cakes from pans and place on a wire rack to cool.
     
  4. In another bowl, combine cream cheese, peanut butter, and butter; beat until fluffy. Add confectioners' sugar and remaining vanilla. Beat until thoroughly combined. Frost cake and sprinkle with peanuts.

Like some others, I was less than thrilled with the overwhelming banana taste. However when I made it again I just reduced the amount and it was fine.

Taste like banana bread to me. If you like banana bread than you may like this. I could eat it with or without the frosting. I thought it was pretty good and I might make it again

Wonderful! I added 2 heaping tablespoons crunchy peanut butter to the batter. After the cak was baked I poured 1/2 bag semi-sweet chocolate chips on top and spread them when melted. Then I frosted the cake. Also, I used a 13 x 9 inch pan. Delicious!

I was wondering how this would turn out in a 13 x 9 pan. Did you bake it the recommended time?

If you want to truly make this The King's Cake skip the peanuts and top the finished cake with chopped, extra crisp bacon instead. That really sets it off perfectly! Bacon is perfect as an ingredient for so many cakes, cupcakes and doughnuts! Dee-lish!

I cant wait to try this. I saw the ban/penut butter cupcake on tv the other day, so i logged on. Im gonna try to make them both. I love this combination. My favorite way to eat it is to just smear penut butter right on my banana!!
