Triple Chocolate Cake

You know how some diners have the biggest cakes you've ever seen displayed in beautifully-lit cases so your taste buds start working from the minute you walk in? One of their offerings is almost always mile-high chocolate cake, so, of course, we had to include an extra-chocolatey chocolate cake recipe.

Serves: 12

Cooking Time: 45 min

Ingredients
  • 1 (18 ½-ounce) package chocolate cake mix
  • 1 (4-serving) package instant chocolate pudding and pie filling
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 cup water
  • 1 cup heavy cream
  • 1 (16-ounce) container milk chocolate frosting
Instructions
  1. Preheat oven to 350 degrees F. Coat two 9-inch round cake pans with cooking spray.
     
  2. In a large bowl, combine cake mix, pudding mix, sour cream, oil, eggs, and water; mix well and pour into cake pans. Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Allow to cool slightly then remove to a wire rack to cool completely.
     
  3. Meanwhile, in a medium bowl, beat heavy cream 8 to 10 minutes, or until very thick. Add half of frosting; mix well and chill filling until cake is cooled.
     
  4. Place one cake layer on a serving platter; spread with filling. Place second cake layer over first and frost top and sides with remaining frosting. Serve immediately or chill until ready to serve.
