Beefy Rice Pie

After a hectic day, we all look forward to a home-cooked meal. But when we're the ones doing the cooking, nothing beats Beefy Rice Pie at making short work in the kitchen!

Serves: 4

Cooking Time: 20 min

Ingredients
  • 1 pound ground beef
  • 1/2 pound hot or sweet Italian pork sausage, casings removed
  • 1 (8-ounce) can tomato sauce
  • 2 cups cooked rice
  • 4 slices (6 ounces total) mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
Instructions
  1. In a large skillet, brown ground beef and sausage for 8 to 10 minutes over medium-high heat, until cooked and crumbly; drain off excess liquid and set aside in a medium bowl.
     
  2. In another medium bowl, combine tomato sauce and rice then layer half the mixture in the skillet. Top with half the meat mixture then place 2 slices mozzarella cheese over the top and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers.
     
  3. Cover and cook over medium-low heat for 8 to 10 minutes, or until cheese melts. Let sit 5 minutes then slice into wedges and serve immediately.
Note

Go ahead and give it a sprinkle of fresh chopped parsley or paprika for a little added color.
