Loaded BBQ Baked Potato Casserole

This dish is a hands-down favorite with my gang! The cheesy casserole is piled high with our favorite baked potato toppings and then some!

Cooking Time: 19 min

What You'll Need:
  • 6 slices precooked bacon
  • 1 (24-ounce) package refrigerated mashed potatoes
  • 1 cup (4 ounces) shredded Monterey Jack cheese with peppers
  • 1/2 (8-ounce) package cream cheese, cut into cubes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups (12 ounces) shredded sharp Cheddar cheese, divided
  • 1 (8-ounce) container sour cream
  • 2 cooked chicken breasts, shredded
  • 1/2 cup barbecue sauce
What To Do:
  1. Crumble bacon, and set aside. Preheat oven to 375 degrees F.
     
  2. Stir together mashed potatoes, next 4 ingredients, and 2 cups Cheddar cheese in a large microwave-safe bowl. Microwave, covered, at HIGH 4 minutes. Stir in sour cream.
     
  3. Spoon potato mixture into a lightly greased 7- x 11-inch baking dish. Arrange chicken evenly over potatoes; drizzle with barbecue sauce. Sprinkle evenly with bacon and remaining 1 cup Cheddar cheese.
     
  4. Bake 15 minutes or until casserole is thoroughly heated and cheese is melted.
