Minestrone Casserole

It's not a soup, it's a casserole! Minestrone Casserole is so thick and hearty that you'll probably need a fork and a spoon to eat it!

Serves: 6

Cooking Time: 1 hr

What You'll Need:
  • 1 pound bulk Italian sausage
  • 1/2 cup chopped celery (1 stalk)
  • 6 ounces (2 cups) uncooked medium-sized pasta shells
  • 2 (14-1/2-ounce) cans whole tomatoes, chopped
  • 1 (15-ounce) can kidney beans, undrained
  • 1 (10-ounce) package frozen whole kernel corn, thawed and drained
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon garlic poweder
What To Do:

 

  1. Preheat oven to 375 degrees F. Coat a 2-1/2-quart casserole dish with cooking spray.
     
  2. In a medium skillet, brown sausage and celery over medium-high heat for 8 to 10 minutes; drain excess liquid.
     
  3. Pour sausage and celery mixture into a large bowl and add remaining ingredients; mix well. Pour into prepared casserole dish; cover and bake 50 minutes, or until heated through and pasta is cooked.
