American Pie Chicken

Apple pie topped with a wedge of Cheddar cheese...how American and delicious! That's why I decided to top chicken breasts with those same tastes to get a taste worthy of a salute.

Serves: 4

Cooking Time: 35 min

Ingredients
  • 4 boneless, skinless chicken breast halves (1 to 1¼ pounds total)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup apple butter
  • 1/4 cup (1 ounce) shredded Cheddar cheese
Instructions
  1. Preheat the oven to 350°F.

  2. Place the chicken in a 7" x 11" glass baking dish that has been coated with nonstick vegetable spray. Sprinkle with the salt and pepper, then spread the apple butter evenly over each breast. Cover with aluminum foil and bake for 25 to 30 minutes, or until the juices run clear.

  3. Remove from the oven and uncover. Sprinkle the cheese evenly over the top of the chicken and return to the oven. Bake, uncovered, for 4 to 6 minutes, or until the cheese is melted.
Notes

Apple butter can be found in the jelly and jam section of your supermarket. And, contrary to its name, it does not contain butter.
