Chicken Tostadas

Our chicken tostadas are an easy south-of-the-border-style skillet meal that turns pantry staples into a mealtime fiesta!

What You'll Need

  • 2 teaspoons vegetable oil
  • 4 boneless, skinless chicken breast halves (about 1 pound total), cut into 1/2-inch cubes
  • 1/2 cup water
  • 1 (1-1/4-ounce) package dry taco seasoning mix
  • 1 (15-ounce) can black beans, rinsed and drained
  • 3/4 cup (3 ounces) shredded Mexican cheese blend, divided
  • 6 (6-inch) tostadas (see Note)
  • 2 scallions (green onions), sliced

What to Do

  1. In a large nonstick skillet, heat oil over medium heat. Add chicken and sauté 2 minutes, until browned. Add water and taco seasoning; reduce heat to low and simmer 5 minutes. Add black beans and simmer 2 more minutes; remove from heat.
     
  2. Arrange tostadas on a serving platter; sprinkle evenly with cheese then top with chicken mixture and sprinkle with scallions. Serve immediately.

Note

  • If ready-made tostadas aren’t available, place 6 (6-inch) corn tortillas on a baking sheet and bake in a 375 degree F. oven for 5 to 7 minutes, or until crisp.

I made these for dinner tonight with a few minor adjustments that I think enhanced the flavor. I skipped the onions since I didn't have any, but what I did do was add the beans to the chicken when I added the taco seasoning. I also threw on about a tablespoon of chipotle salsa on top of each one, then topped with a bit of cheese and sour cream. I made a half recipe and ended up with enough for leftovers. Super yummy and super quick. Will definitely make again.

Perfectly good without meat, or use taco meat... Guacamole is great also. In Texas we also put jalapenos, jicama (really good instead of lettuce), refried beans instead of black beans, (but I like the black beans best), hot salsa etc... My daughter likes hers with beans and cheese only... and instead of using taco seasoning mix, use a good chili powder instead (less preservatives)...

This has quickly become a family favorite! This is a quick dinner on nights when there isn't a lot of time to cook!
