Chicken with Chunky Cucumber Sauce

When you're feeling adventurous, try this Chicken with Chunky Cucumber Sauce. It's a refreshing change of pace from ordinary chicken.

What You'll Need

  • 4 boneless, skinless chicken breasts
  • 1/4 cup cornmeal
  • 10 1/2 teaspoons dry mustard
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon seafood seasoning (to taste)
  • 2 to 3 tablespoons vegetable oil
  • 1 (8-ounce) bottle ranch dressing
  • 1 cucumber, peeled, seeded and chopped
  • 2 scallions, chopped
  • 1/2 teaspoon dried dillweed

What to Do

  1. Cut chicken breast into thirds. In a large shallow dish, combine the cornmeal, dry mustard, nutmeg, cayenne pepper and seafood seasoning; dip chicken pieces into mixture.

  2. In a skillet, heat the oil until moderately hot; sauté the chicken pieces until golden.

  3. In a bowl, combine the ranch dressing, chopped cucumber, scallions and dillweed. Warm, (do not cook) the sauce either in the microwave or stovetop in a saucepan, and serve under or over the chicken.

Notes

this makes about 1-1/3 cups cucumber sauce, which you might want to try with other chicken or fish dishes.
