Classic Scalloped Chicken

Scalloped dishes are hearty and soul-soothing, typically baked in a sauce and covered with seasoned bread crumbs. Our Classic Scalloped Chicken bakes up as a comforting all-in-one main-dish meal.

What You'll Need:
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons (1/2-stick) butter, melted and divided
  • 1 3/4 cups chicken broth
  • 1 (12-ounce) jar chicken gravy
  • 1 (4-1/2-ounce) jar sliced mushrooms, drained
  • 1 (2-ounce) jar diced pimientos, drained
  • 1 1/2 cups instant rice
  • 1/4 cup plain bread crumbs
What To Do:
  1. Preheat oven to 400 degree F. Coat a 9" x 13" baking dish with cooking spray.
     
  2. Season chicken with salt and pepper, and sauté in 2 tablespoons melted butter in a large skillet over medium-high heat for 8 to 10 minutes, or until golden.
     
  3. Remove from heat and add chicken broth, chicken gravy, mushrooms, pimientos, and rice; mix well. Pour into prepared baking dish, cover with aluminum foil, and bake 30 minutes.
     
  4. Remove from oven, uncover, and stir well. Sprinkle with bread crumbs and drizzle with remaining 2 tablespoons melted butter. Bake, uncovered, for 5 to 10 minutes, or until rice is tender and topping is golden. Serve immediately.

Simple, very good. Goes nicely with peas and carrots for a vegetable.

I double this, I also saute EVVO onions, garlic, fresh mushroom and white wine I added mild Peppadew peppers and chopped a can green chilies chopped, poultry seasoning

This is very similar to a dish that I prepare. Instead of pimrntos, I use finely chopped red, and yellow, bell peppers.

Didn't particularly care for this receipe. It was VERY bland, needs something added, but not sure what. Just kind of tasteless.

YES it needs a little extra flavor add either1/2 block softened cream cheese , 1/2 cup sour cream or 3 Tablespoons real mayonaise also can add 1 teaspoon sage To soften cream cheese unwrap place on plate and zap in microwave 20 sceonds comes out soft and ready to use!

I added some chopped onions and 1 tablespoon poultry seasoning. Came out excellent. You might also add a little thyme.

It is a little bland, but I found Italian bread crumbs dressed it up nicely. I like the idea of using Bell's or similar seasoning for this; I'll probably add it next time. That said, sometimes simple is good and I like simple.

Try adding some herbs... Mrs Dash or Cavender's are good herb blends that add lots of flavor
