Creamy Chicken Divine

Thanks to the microwave, this classic chicken divan is done in 18 minutes- making it divine in our book!

What You'll Need

  • 2 (10-ounce) packages frozen broccoli spears
  • 1 (10-3/4-ounce) can cream of chicken soup, undiluted
  • 3 cups chopped cooked chicken
  • 1/4 teaspoon poultry seasoning
  • 1 (8-ounce) container sour cream
  • 1 cup (4-ounces) shredded Cheddar cheese
  • 16 round buttery crackers, crushed (about 3/4 cup)
  • 2 tablespoons slivered almonds
  • 1 1/2 teaspoon butter, melted

What to Do

  1. Place broccoli in a shallow 2-quart microwave-safe baking dish. Cover tightly with heavy-duty plastic wrap; fold back a small corner of wrap to allow steam to escape. Microwave at HIGH 7 minutes; drain and set aside.
     
  2. Combine soup, chicken, and poultry seasoning in a microwave-safe bowl; cover and microwave at HIGH 3 minutes. Stir in sour cream and 1/2 cup shredded cheese. Microwave, uncovered, at HIGH 2 minutes. Spoon chicken mixture over broccoli; sprinkle with remaining cheese.
     
  3. Combine cracker crumbs, almonds, and butter; sprinkle over cheese. Microwave, uncovered, at HIGH 6 minutes.
     

Notes

This recipe was tested in an 1100-watt microwave oven.

Very tasty a nifty idea to speed things along with the microwave. A flavorful tip next time you pick up a rotisserie chicken at the grocery store grab a second one. The meat from them works wonderfully in this dish - the flavors mesh well. My local grocer has a promotion 3 or 4 times a year BOGO on the chickens, and I always strip the meat off of one put it in the freezer for when I need ready cooked chicken. Saw this recipe while looking for something a little different for supper tonight. Pulled the chicken out quick thawed it in microwave. That added about 10 minutes to the recipe. lol The rotisserie seasoning layered well with the other flavors here. Next time I think I shall try adding a bit of thyme as well.
