Easy Chicken Pot Pie

No kidding, it takes just 5 minutes to throw together this Easy Chicken Pot Pie! When you have canned soup, frozen vegetables, refrigerated biscuits and a rotisserie chicken on hand, you can get a comforting, homestyle dinner on the table in no time!

What You'll Need:
  • 2 (10-3/4-ounce) cans cream of broccoli or chicken soup, undiluted
  • 1 cup milk
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 (16-ounce) package frozen chopped mixed vegetables (broccoli, cauliflower, and carrots)
  • 2 cups cubed cooked rotisserie chicken
  • 1 (12-ounce) can refrigerated biscuits
What To Do:
  1. Preheat oven to 350 degrees F.
     
  2. In an ungreased 9- x 13-inch baking dish, combine first 4 ingredients. Top with vegetables then chicken.
     
  3. Bake 15 minutes then remove from oven.
     
  4. Cut each biscuit into 4 pieces then arrange over chicken. Bake 22 more minutes, or until biscuits are golden.

My mother used to make something like this in an iron skillet. She would make a thin chicken gravy, add the frozen mixed veggies, cook for a bit then add biscuits to top and bake until biscuits were done. The fact that the biscuits were on top of HOT ingredients made the bottoms of biscuits cook done.

Super easy to make and delicious. We used one can cream of broccoli and one can cream of chicken with much success.

where's the bottom crust????

That is a good point. I guess this iS a good "practice" recipe. It would be good to use the refrig pie crust on bottom and top to make a "pie". i LIKE CRUSTS ON MINE.

Excellent and OH so easy!

All this sounds fine, but my concern would be the biscuits. It would appear to me that a roll-out dough ( either combined biscuits ) or strips weaved on top would be better. The quartered biscuites would most likely be real doughy on the bottom of each piece (side next to the ingredients). Just my observation....of what "might" be! Have a great day, and enjoy. -John-

Not the case! Placing the biscuits on top and baking until browned turns out just fine. I've done this recipe for years.

bigjohn Did you actually make this dish before you 'rated' it? It turns out just fine! You bake it an additional 22 minutes, so the biscuits 'do' get done. Next time, try making a dish before you rate it!

Looking for Amish Chicken Pot Pie made with pasta

My mother used to make this all the time, but she used the frozen mixed vegetables with peas, carrots etc. I was so glad to find the recipe. I had forgotten all about this dish until now. I plan to start making it again. Thank you!!
