What You'll Need

  • 2 tablespoons butter
  • 3 pounds whole chicken, cut into 8 pieces
  • 3/4 cup cream of coconut
  • 1/4 cup lime juice
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
  • 1 green bell pepper, diced
  • 1 (8-ounce) can pineapple chunks, drained
  • 1 onion, cut into wedges

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking pan with cooking spray.
  2. In a large skillet, melt butter over medium-high heat, then brown chicken. Remove chicken to prepared baking pan; set aside.
  3. In the same skillet, combine cream of coconut, lime juice, soy sauce, and cornstarch; bring to a boil over medium-high heat. Stir in remaining ingredients then pour over chicken.
  4. Bake, uncovered, 50 to 60 minutes, or until no pink remains in chicken and the juices run clear.
