What You'll Need

  • 6 boneless, skinless chicken breast halves
  • 12 unpeeled and 6 peeled garlic cloves
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and drained well
  • 1 can (10-3/4 ounces) cream of chicken soup
  • 1/2 cup white wine
  • 1 teaspoon ground ginger
  • 6 slices Swiss cheese

What to Do

  1. Preheat the oven to 350 degrees F.

  2. Place the chicken in a 9- x 13-inch baking pan that has been coated with cooking spray. Arrange the unpeeled garlic cloves around the chicken. Spread the spinach evenly over the top of the chicken.

  3. In a blender, combine the soup, wine, peeled garlic, and ginger, mix until smooth. Pour the mixture over the chicken, cover, and bake for 1 hour. Top with cheese slices and bake, uncovered, for 5 minutes more.

I really do not like garlic...could I do this recipe with rosemary or maybe basil ? Trying to think of something that would be good with the ginger

I didn't have Swiss cheese so I used Asiago - fantastic!
