"Let us" Roast Chicken

At first glance you're going to think we've made a mistake in these directions - cover a chicken with lettuce leaves?! Yup! The lettuce helps hold in the moisture and keeps the spices from burning. It actually acts like the skin when the chicken roast is finished.

What You'll Need:
  • 1 whole chicken (2 to 3 pounds), skin removed
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 large iceberg lettuce leaves, washed and patted dry
What To Do:
  1. Preheat oven to 350 degrees F. Place chicken breast side up in baking dish.
  2. In a small bowl, combine remaining ingredients except the lettuce; mix well. Rub chicken evenly with spice mixture, then lay lettuce leaves over the top, curving it around and completely covering chicken.
     
  3. Bake 65 to 70 minutes, or until juices run clear and no pink remains. Discard lettuce leaves before serving.

Can Romaine lettuce be used in place of Iceberg lettuce? I don't buy Iceberg lettuce

Yes, you can absolutely use Romaine lettuce in place of Iceberg lettuce. Enjoy!

This recipe is so yummy! The chicken is very moist. I cooked bone-in chicken breasts. Added poultry seasonning to the rub. Sharon

About a week ago I tried this recipe. However, I substituted chicken breasts for the whole chicken and added a half-teaspoon of garlic powder to the spices. Our family, including the grandchildren, were delighted and there weren't any leftovers to use up.

My reply should have read "an additional half-teaspoon of garlic powder."

Baking this for tonight dinner ..thank you for sharing,i'm not allow no salt, so i use Mrs Dash no salt..

I wish you would start putting nutritional values with your recipes....alot of us are trying to watch our weight . I make many of your dishes, have not had any that I could give a bad review to :)

This sounds like a great idea - am going to try it soon. Always like something different.
