Mama's Chicken Pot Pie

M-m-m...the aroma of this chicken pot pie baking in the oven takes us back to the warmth of Mama's cozy kitchen, but without all the fuss and mess! Our version uses frozen vegetables with an easy homemade crust. Make this family favorite tonight, and you'll have 'em beggin' for it again and again!

What You'll Need:
  • 1 (10-3/4-ounce) can cream of celery or cream of chicken soup, undiluted
  • 1 1/2 cups chicken broth
  • 3 cups chopped cooked chicken
  • 1 (10-ounce) package frozen mixed vegetables
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup butter
  • 1 cup self-rising flour
  • 1/2 cup milk
What To Do:
  1. Preheat oven to 400 degrees F. Cook soup in a medium saucepan over medium heat until hot. Gradually add broth, stirring until smooth.
     
  2. Add chicken, frozen vegetables, salt, and pepper. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally. Spoon mixture into a lightly greased 7- x 11-inch baking dish; set aside.
     
  3. Cut butter into flour with a pastry blender or 2 knives until mixture is crumbly. Add milk, stirring just until dry ingredients are moistened. (Mixture will be lumpy.)
     
  4. Gently spoon batter evenly on top of chicken mixture. Bake, uncovered, 35 minutes or until golden.

Be a keeper for left over Thanksgiving turkey bits, too. I love to add some poultry seasoning and bullion crystals to these kind of 'gravy' recipes, too. Great color, smell and flavor!

I made this today. Looked at suggestions and I used diced potatoes with the mixed veggies and Bisquick. I dropped the dough but next time I will roll it out so it won't be quite as thick. Still, it's better than any other chicken pot pie recipe I've made. Increased ingredients by 1/2 and daughter and family get a casserole, too. Definitely it's a keeper.

Do you just lay the biscuits on across the top?

Why can't some of your recipes be placed in my recipe box? I am not looking at Mama's chicken pot pie recipe and I can find no place to click on to save to my recipe box.

If uou have not already removed the recipe, follow these instructions. Click to open yur recipe box. If it states "Is this my recipe" click and it will open to "save to my recipe box." Once inside your recipe box, look to the right bottom of the recipe you want to remove. There you will see the line stating to "remove that particular recipe. Take your time as you follow the steps because it is easy to overlook. I do it all the time. Then laugh at myself for being such a fast looker and not really seeing anything.I know this works because I have done it many times.

Make your own self rising flour, it is so easy. Using a dry measure, measure the desired amount of flour into a separate container. For each cup of all-purpose flour, add 1 1/4 teaspoons of baking powder and 1/4 teaspoon of salt. Mix to combine I never buy self rising flour because if you don't use it by a certain date the baking powder quits working, then you stuck with a bag of more expensive flour. I have had old cake mixes and they to will not rise after the expiration date because of the baking powder in the mix. I have added fresh baking powder to the mix and the cake will rise.

I usually add a pinch of poultry season and use the refrigerator tube biscuits. Yummy!

It can't be easier than this.

Good ... I added almost 1 teaspoon poultry seasoning. Next time, I will use 1/2 the topping ingredients, because we don't like the crust too thick. This recipe is good left over, too!

jamiesway I used refrigerated Pillsbury cresant dough the first time, and the next time I used crands jr layers. Just seperated each into two equaL layers and both these options turned out well. wE don't like the crust too thick either.l

Will try this, sounds good. Would it be better to let the veggies thaw & drain so as not to add more liquid??

Ernie & Peggy I use Bisquick Heart Smart for this recipe and it comes out really good.

I used less broth (about 1 cup instead of 1 1/2 cups) and a few diced potatoes. I also sauteed about 1/2 cup each of onion and celery to add to the soup and broth along with a smidge of poultry seasoning. Delicious.

A can of veg-all works better.

Do I have to use self-rising flour? Can I use bleached, white flour for multi-purpose use?

We would not recommend using all-purpose flour, because the biscuit topping will not rise. Enjoy!

To make this even quicker, you can use frozen biscuits. Let them thaw before you add them on top.

I really liked this recipe and so did my husband. Just a few changes. The first night we had it, seemed a little watery maybe due to all the broth. This wasn't a problem the second time after it had been refrigerated. The next time I would just slightly heat the mixed vegetables in the microwave (not fully cook) and then add them to the filling. I felt by fully cooking them with the mixture in advance, they were too cooked. I would rate this 4 1/2 stars.

I can stop looking for chicken pot pie recipes since I found this one. The only thing I did differently was add a smidgen of poultry seasoning. I used Campbell's Healthy Request cream of chicken soup. Easy to make and delicious!

can you use a bisquick type toping for this?

Yes, just use the recipe on the box for "drop" biscuits.

Instruction 1, Step 3--Duh!!

I think you need to tell folks to add the chicken broth to the soup when you "cook the soup"!

I agree with you dlita every recipe should explain it step by step no matter how obvious some one would think it is. Nothing should be looked at as a Duh !! There are a lot of people out there just learning how to cook and do need all the help they can get. I am making this tonight sounds very tasty and not time consuming.
