Mediterranean Chicken Breasts

We tend to think Mediterranean flavors are to die for! What do you think? Well, we know that after you give these Mediterranean Chicken Breasts you'll have no choice but to agree with us!
Ingredients
- 4 bone-in chicken breast halves
- 8 cloves garlic, crushed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 2 teaspoons dried oregano
- 4 lemons, thinly sliced
- 16 to 20 kalamata olives, pitted
- 1 (14-ounce) package crumbled feta cheese
Instructions
- Preheat the oven to 350 degrees. Lift skin gently from chicken breasts without detaching it; place 2 crushed garlic cloves under skin of each chicken breast. Replace skin. Rub chicken breasts with olive oil, and sprinkle with salt, pepper, and oregano.
- Place lemon slices in a 9- x 13-inch baking dish. Arrange chicken breasts over lemon slices. Sprinkle olives around chicken.
- Bake, uncovered, for 45 minutes or until done. Transfer to a serving dish, and sprinkle with feta cheese. Garnish, if desired, with lemon slices or fresh oregano sprigs.
Notes
Bone-in chicken breasts have three advantages over the boneless variety: a hefty visual appeal, heightened flavor, and a lower price. Now who'd argue with those?
