Secret Tempura Chicken

This recipe for Secret Tempura Chicken will put your favorite Asian restaurant out of business! And we love it because it also works with almost any type of vegetable (although firm ones work best).

Cooking Time: 20 min

What You'll Need:
  • 5 cups biscuit baking mix
  • 1 1/2 teaspoons cayenne pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons salt
  • 2 1/2 cups (20 ounce) club soda
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 1 bunch broccoli, cut into florets
  • 1/2 pound whole fresh mushrooms
  • 1 zucchini, cut into ½-inch chunks
  • 1 (15 ounce) can whole potatoes, drained and cut in half
  • 3 cups vegetable oil for deep-frying
What To Do:
  1. In a large bowl, combine biscuit baking mix, cayenne pepper, garlic powder, and salt. Add club soda; mix well. Add remaining ingredients except oil; stir to coat completely.
     
  2. Heat oil just until hot in a wok over medium-high heat or an electric wok that has been preheated to 400 degrees F. Place battered chicken and vegetables in hot oil one piece at a time until wok is full; do not overcrowd wok.
     
  3. Cook 8 to 10 minutes, or until coating is golden brown. Remove with a slotted spoon and drain on paper towels.
     
  4. Continue with remaining chicken and vegetables until all is cooked, discarding any remaining batter.
     
  5. Serve immediately, or keep warm on a baking sheet in a 150 degrees F oven up to 1 hour before serving.
