Shortcut Chicken 'n' Dumplings

No need to spend hours over a hot stove to make this well-known dish. We're takin' a shortcut or two. Shh...no one will know the difference!

Serves: 4

Cooking Time: 1 hr

What You'll Need:
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 2-inch chunks
  • 3 1/2 cups reduced-sodium chicken broth
  • 1 cup water
  • 1/4 cup (½ stick) butter
  • 1/4 teaspoon black pepper
  • 1 (7 ½-ounce) package refrigerated biscuits (10 biscuits), each biscuit quartered
What To Do:
  1. In a large pot, bring all ingredients except biscuits to a boil over high heat. Reduce heat to low, cover, and simmer 25 to 30 minutes, or until no pink remains in chicken.
     
  2. Uncover and return to a boil over medium-high heat. Place biscuit quarters a few at a time into pot, making room for all of them.
     
  3. Cook 8 to 10 minutes, or until they turn into dumplings, and are cooked through, and broth has thickened to form a gravy.
     
  4. Serve chicken in bowls with dumplings and gravy.
