Stovetop Chicken Noodle Parmigiana

Who would guess that those inexpensive packages of Asian-style ramen noodles could be so versatile? Our delicious Stovetop Chicken Noodle Parmigiana cooks up all in one skillet, so it's quicker and there's the bonus of less clean-up.

What You'll Need:
  • 1 egg, beaten
  • 1/2 cup Italian-flavored bread crumbs
  • 4 boneless, skinless chicken breast halves (1 to 1-1/2 pounds total)
  • 1/4 cup vegetable oil
  • 1 (26-ounce) jar spaghetti sauce
  • 1 1/2 cups water
  • 1/2 pound fresh mushrooms, cut in half
  • 2 (3-ounce) packages ramen noodles, broken up (Reserve seasoning packets for another use)
  • 1/2 cup (2 ounces) shredded mozzarella cheese
What To Do:
  1. Place egg in a shallow dish. Place bread crumbs in another shallow dish.
     
  2. Dip chicken in egg then bread crumbs, coating completely.
     
  3. In a large skillet, heat oil over medium-high heat. Cook chicken 5 to 6 minutes, or until no pink remains, turning halfway through cooking. Remove chicken to a serving platter and cover to keep warm.
     
  4. Add remaining ingredients, except cheese, to skillet. Cook 4 to 5 minutes, or until noodles are tender.
     
  5. Reduce heat to medium-low and return chicken to skillet, placing it over noodles. Sprinkle chicken with mozzarella cheese. Cover and cook 4 to 5 minutes, or until cheese is melted and chicken is warmed through.
Notes

There's nothing like a fresh and crispy Caesar salad to compliment this delicious Italian main dish!

I made this recipe tonight and it really was quick and turned out very good. Thanks.

I love ramen noodles, but hate the seasoning pack which is more salt than flavor. Thanks to the person who came up with this recipe that doesn't use the seasoning pack. I hope more people offer recipes without the pack since the ramen noodles are really good.

Chicken Noodle PARMIGIANA --- so where's the parmesan cheese? Parmesan cheese is a "given" with Chicken Parmigiana along with the mozzarella.

I agree with Jim B. I would mix in 1/8 cup of Parmesan cheese with the bread crumbs. Also, saute chopped onions and the mushrooms before adding the spaghetti sauce. Eliminate the water and use cooked egg noodles or spaghetti noodles instead.

Sounds like a great recipe! I make my own sauce also but this is such a quick simple variant. I grow tomatoes and as the crop ripens we make spag. sauce, tomato sauce, and canned tomatoes. Home canning is wonderful! We even can potatoes! Great for mashed, fried or in stews

I agree with you imcarcet 7246431... or make your own spaghetti sauce and use spaghetti instead of Ramen noodles. Spaghetti sauce is really quite simple, it is just better if you let it simmer for a while and takes longer than using jarred sauce. We try not to buy packaged for in our house due to all of the preservative/salt/sugar in most prepared foods...

Whew way too salty for me. Why is everyone so hooked on Ramen noodles? They are gross! Wonder what the sodium count on this recipe is....

Sounds like you used the Ramen noodle seasoning pack. That is why it was so salty.

Did you use the seasoning packets? If you did that is why, It state NOT to USE :)

The flavor was wonderful, the chicken moist and flavorful. I should have stopped the heat on the pan a few minutes earlier to get al dente noodles. Everyone enjoyed dinner!

Most of Mr Food's recipes are based on Flavor,not calories if you want to cut calories simply use less butter, fat,or oil ..use applesauce for part of butter in cookies or cakes bake the meat instead of frying whenever possible you can coat pans with spray to keep from sticking use no fat or low fat mayo , sour cream or milk use Splenda instead of sugar or cut sugar in half or use 1/2 sugar and 1/2 Splenda to cut calories other than using half Splenda for the sugar , expect these alterations to GREATLY alter the flavor and texture of the recipes To be very truthful FAT is what gives most recipes alot of flavor and texture but you can certainly cut back, Of course it is up to you This is not a weight watchers site but you can really adjust the ingredients to suit your lifestyle and choice

My grandkids LOVE ramen and I loathe it because of the high sodium seasoning packet. THANK YOU for a recipe where I can use the ramen & still serve them a nutritious meal. FYI, I will file those seasoning packets in the trash can!

We buy the ramen noodles and use the HERB-OX SODIUM FREE CHICKEN OR BEEF INSTANT BROTH SEASONING... :p
