Very Ritzy Italian Chicken

Very Ritzy Italian Chicken is fancy enough for company, but easy enough to add excitement to any weeknight meal. Our creamy-cheesy topping for chicken breasts taste luxurious.

Ingredients

• 6 boneless, skinless chicken breast halves
• 2 eggs, slightly beaten
• 1 cup seasoned bread crumbs
• 3 tablespoons olive oil
• 6 slices mozzarella cheese
• 1 pint heavy cream
• 1 cup grated Parmesan cheese
• 2 tablespoons chopped fresh parsley
• salt to taste
• pepper to taste

Instructions

1. Preheat oven to 350 °F. Dip the chicken breasts in the eggs. Place the bread crumbs in a shallow bowl; coat the chicken with the bread crumbs.
   
   
2. In a large skillet, heat the oil until moderately hot. Place the chicken in the skillet and brown lightly on both sides. Remove from pan and place in a baking dish.
   
   
3. Top each breast with a slice of mozzarella cheese.
   
   
4. In a saucepan, mix together the heavy cream, Parmesan cheese, parsley, salt and pepper. Cook until mixture is hot and has thickened. Pour over chicken and bake for 25 minutes or until cheese is melted and light golden.
   
   
   

Notes

This is a great make-ahead dish that will keep in the refrigerator for a day or two. Bake it 30 minutes prior to serving, and serve over cooked pasta. Fancy it up more with a sprinkling of a bit of nutmeg or paprika.
