Bean Chili

Chili is so popular because it's so good. Here's a meatless one you'll really enjoy.

Serves: 8

Ingredients
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 1 cup picante sauce
  • 1 cup chicken broth
  • 2 cans (28 ounces each) crushed tomatoes or 2 cans (28 ounces each) whole tomatoes, chopped
  • 1 can (15 ounces) pinto beans, drained
  • 1 can (15 ounces) kidney beans, drained
  • 1 can (15 ounces) black-eyed peas, drained
  • 1 teaspoon ground cumin
Instructions
  1. In a large saucepan or Dutch oven, sauté the onion in the olive oil for 4 to 5 minutes, until softened.

  2. Add all the remaining ingredients, bring to a boil, reduce heat and simmer for 10 to 12 minutes.

Notes

Served with a salad this is a whole meal, but it's also a great go-along. You can add some browned meat or sausage, a little salt or garlic to give it some zip or even any combination of beans.
