Saucy White Chili

Looking for a new chili recipe? Then try our Saucy White Chili because it's so darn good! White chili is a change of pace from traditional beef recipes, and it's just as easy to make. Plus, using chicken makes it a healthy alternative!

What You'll Need:
  • 1 tablespoon vegetable oil
  • 6 skinless, boneless chicken breast halves (1-1/2 to 2 pounds total), cut into 1-inch cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 5 (16-ounce) cans Great Northern beans, undrained
  • 1 (14-1/2-ounce) can whole tomatoes, undrained, broken up
  • 1 (4-ounce) can chopped green chilies, undrained
  • 3 1/2 cups chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
What To Do:
  1. In a soup pot, heat oil over medium heat. Sprinkle chicken with salt and pepper; sauté 5 to 6 minutes, or until browned.
     
  2. Add onion and garlic and cook 3 to 4 minutes, or until onion is tender. Add remaining ingredients and bring to a boil.
     
  3. Reduce heat to low and simmer 50 to 60 minutes, or until chili thickens slightly, stirring occasionally.

A very good chicken chili. I used 3 cans of cannellini beans---5 just seemed like too much. For our tastes, 1 TABLESPOON of chili powder (not 1 teaspoon) gave about the right amount of heat/flavor.

I used white and red kidney, northern and cannellini beans -- delicious !

I used sliced can tomatoes instead of whole ones and Tyson grilled chicken breast torn into pieces. Then i cooked this all day in the crock pot. mmmmmmmmmmmmm!

I didn't make it with 5 cans of beans I used only two but this is a keeper!. It's very tasty. The only thing amiss was it took 2 hours instead of 1 but since we were not going anywhere there was no problem. I used no salt/sodium whole tomatos and chicken broth - to cut sodium level and calories.

I made the saucy white chili late one Sunday afternoon after my husband and I had been out most of the day. It was quick, easy, and delicious! I recommend it. Next time, though, I think I'd cut the recipe in half. It was too much for just two people. But if you'd like to share, most people would enjoy it!

Nikkiakiva 2487029 and everyone. I've made this chili several times...and yes, it is too much for 2 people at one time..but..this recipe freezes well. I tried it with Deer Meat and Smoked Sausage, too. It's awesome!!!

I love to make more so I can freeze the other half.
