Cake Mix Snickerdoodles

When it comes to simple cookie recipes, this one can't be beat. Start with cake mix and in a few easy steps, end up with a freshly baked batch of Snickerdoodles!

What You'll Need:
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 (18-1/4-ounce) package white cake mix (see Note)
  • 1 stick butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
What To Do:
  1. Heat oven to 350 degrees F. In a small bowl, mix together sugar and cinnamon; set aside.
  2. In a large bowl, mix together cake mix, butter, egg, and vanilla with a spoon until dough forms. (Some dry mix will remain.) Shape dough into 1-inch balls.
  3. Roll balls in sugar mixture, then place about 2 inches apart on ungreased baking sheets.
  4. Bake 10 to 12 minutes, or until set. Remove from baking sheets to cooling racks.
Notes

We tested this recipe with both the 18.25 ounce box as well as a 15.25 ounce box of cake mix and both batches of cookies came out the same. Either size box will work for this recipe.

Can this recipe be made with gluten free white cake mix?

Hello! You can try using unsalted butter, instead of salted butter. The Test Kitchen hasn't tried it this way, but doesn't think that adding a little bit of sugar would hurt. :) Enjoy!

Would a sugar free cake mix work?

Yes, a sugar-free cake mix would work. However, this will affect the sweetness of the cookies.

For people with a dairy allergy/intolerance, use the Duncan Hines Classic yellow cake mix, 2 eggs and 1/4 cup oil. Works great and tastes great too without the butter!

I made these today. It made 2 dozen.They are good, but a little salty. Must be the cake mix I used. Very easy to make. A little crumbly while rolling them into balls but they turned out good. I would make again if I wanted good cookies in a hurry.

Could you use a yellow cake mix to make these? Thank you

Can you use sugar free cake mix for these?

The Test kitchen has not tried using sugar free cake mix, but does not see a problem with it.

Can't wait until tomorrow I am going to make these. One batch with a white cake mix and another with a yellow cake mix but I think I will add some orange zest give it a zing

Yes, I made them with yellow cake mix and they turned out just fine for us. Didnt last to long though. ;-)

I am a diabetic. could I use a artificial sweetner instead of the sugar, and have it still taste the same?

You can absolutely use splenda or stevia in place of the sugar!!

Some artificial sweeteners have an after taste like Splenda, so they will make the cookie taste different. Try a natural sweetener like Stevia or Truvia and they wont make the cookie taste different.

cream of tartar with the cinn & sugar or in the dough

Please note that the size (weight) of most cake mixes have changed to 15.25 ounces - which will definitely affect this recipe.

We tested this recipe with the 15.25 ounce box of cake mix as well as the 18.25 ounce box and both batches of cookies came out the same way, so either size box will work. :-)

To keep your cookies soft, place a slice of bread in the bottom of the container they are in. They will keep soft for two weeks if they last that long. If they do and the bread has become hard, just replace with a new slice.

just rolling a vanilla cookie in cinnamon sugar does not make it a Snickerdoodle. If you want these to taste more like an authentic Snickerdoodle, I would suggest adding 1 - 1 1/2 tsp of cream of tartar....this is the ingredient that puts the "doodle" in the Snickerdoodle. Otherwise its just a cinnamon cookie. It's a pet peeve of mine.....lol

this cream of tartar is that the tartar sauce you use for fish? Like in the squeeze bottle? As you can tell i've never made these before. Thanks for any help anyone can give me. Um I have to rate this but don't know so i will just hit the middle thanks again.

cream of tarter is found in the spice department . It is a white powder form not the tarter sauce used for fish. I have found a lot of cake mixes are less than 18.25 ounces. so check before you buy. I have not tried these cookies yet, the reason for my ratting

Absolutely! Just not a Snickerdoodle without Cream of Tartar.

I loved these cookies - quite addicting. If, like me, you're a big fan of raw dough, take these out of the oven a few minutes early. Helps them stay nice and soft even a couple of days later.

These cookies were great, very easy to make and you would never know it was made with a cake mix. I have made them three time in one week.

going to try sugar free ck mx, sounds so simple & tasty!

I tried them and they were pretty good. They were so easy and fast but I had an after taste. I'll try again in case of "my" mistake, otherwise back to the old fashioned snickerdoodle. I tried with a white Pillsbury pudding in the mix; would that make a difference?

Wonderful and easy!! I couldn't get a white cake so I tried a French Vanilia. If you like vanilia you will love this!!

I'm trying yellow cake mix too! That's what I have on hand, I just can't imagine it making a difference since the yoke of the egg is also added. White cake just uses the egg "white" and never uses butter or vanilla. will post how they turn out. (They better be great because now I'm craving them!!! HA HA HA!
