Pecan Sandies

These are the kind of sandies that we grew up with...well, almost. I think this is one of the best versions I've ever tasted. If you like a simple, not-too-sweet cookie, put this on your list of favorites.

Cooking Time: 22 min

What You'll Need:
  • 1 cup (2 sticks) butter, softened
  • 1/4 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup chopped pecans
What To Do:
  1. Preheat the oven to 325 degree F. In a large bowl, with an electric beater on medium speed, cream the butter and confectioners' sugar for 1 minute. Add the vanilla; mix well. With a spoon, stir in the flour and pecans.

  2. Drop by teaspoonfuls about 1 inch apart onto ungreased rimmed baking sheets.

  3. Bake for 12 to 15 minutes, or until the edges are golden; do not over-bake.

  4. Let cool and serve. Makes about 4 dozen.
Notes

Dust the tops of these with a bit of confectioners' sugar right before serving.
