This dynamic dessert packs a punch of flavor. With a winning combination like pumpkin, walnuts, cinnamon, and butterscotch, this is an experience for your taste buds. What You'll Need:
  • 1 1/2 cups canned 100% pure pumpkin
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup butterscotch chips
  • 1 cup chopped walnuts
What To Do:
  1. Preheat the oven to 350 degree F. Coat baking sheets with cooking spray.
     
  2. In a large bowl, combine the pumpkin, sugar, and vanilla; add remaining ingredients and mix well.
     
  3. Drop by teaspoonfuls onto prepared baking sheets.

  4. Bake 12 to 15 minutes or until golden.

     
Notes

Feel free to add in some coconut, raisins, or candied fruit.

Can you make these as a bar?

Does this recipe need to have any butter, margarine or oil in it?

I made this recipe exactly as stated. It is a very sweet cookie and the butterscotch chips over power the pumpkin flavor. It is a very soft cookie, almost cake like.

how many cookies does it make? they sound delicious!

Can I substitute fresh pumpkin for the canned kind, and if so what are the proportions?
