Fudge Filled Cupcakes

Your gang will keep coming back for more of these Fudge Filled Cupcakes. That's because of the rich chocolate surprise in the center of every decadent cupcake.

Makes: 2 dozen cupcakes

Baking Time: 15 min

What You'll Need:
  • 1 (8-ounce) package cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 cup (6 ounces) semisweet chocolate chips, divided
  • 1 (18.25-ounce) package yellow cake mix, batter mixed according to package directions
What To Do:
  1. Preheat oven to 350 degrees F. Line 24 muffins cups with paper baking cups.
     
  2. In a large bowl, with an electric beater on medium speed, beat the cream cheese, sugar, and egg until creamy. Place 1/4 cup chocolate chips in a microwave-safe bowl and microwave on high power for about 30 seconds, or until melted; stir until smooth.
     
  3. Beat melted chips into cream cheese mixture. With a spoon, stir in remaining chocolate chips and set aside. Fill baking cups two-thirds full with cake batter. Drop a heaping teaspoon of cream cheese mixture in center of batter in each cup.
     
  4. Bake 15 to 20 minutes, or until a toothpick insert in cake part comes out clean.


Note

Enjoy these as they are or, for extra creamy flavor, top the cupcakes with Chocolate Cream Cheese Frosting.
