Creamy Cucumber Salad

This refreshing Creamy Cucumber Salad earns big points as a healthy side dish option. We use yogurt instead of mayonnaise to make a creamy dressing that's better for you. We love bringing this creamy cucumber salad recipe along to potlucks, because it's a nice change from your typical coleslaw and potato salad.

What You'll Need:
  • 3 large cucumbers
  • 1 small onion, grated (about 1/2 cup)
  • 2 cups plain yogurt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon dried mint leaves (see Option)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
What To Do:
  1. Peel cucumbers and slice in half lengthwise. Scoop out seeds and coarsely chop cucumbers; place in a large bowl.
  2. Add remaining ingredients to cucumbers; mix well. Serve immediately, or cover and chill until ready to use.
  • When fresh mint is available, go ahead and use it. Coarsely chop 2 tablespoons fresh mint leaves and use it in place of dried mint.

  • You can use Greek yogurt in place of normal yogurt, if you'd like.

what about bacon on top?

You can certainly crumble cooked bacon on top if that's what you prefer - enjoy!

Try replacing the yogurt with sour cream - it's very, very good. And I left out the mint, too.

I made this today and omitted the mint, it was delicious . Will make again.

chopped chives ought to give it some added flavor

It already has onion in it, that should be enough in the onion department.


I have to agree with Denise. Not good, I tried everything from vinegar, sugar mustard. I was to serve it today for a crowd, a labor day cookout, I hate to say I'm to embarrassed to serve it. What worse is I made a double recipe. I think you should remove this from your web. Judy F

The only way this is good, is to use miracle whip, some milk to thin to desired consistency, sugar and salt to taste. It tastes NOTHING like this, yet is very refreshing, and DELICIOUS!

Made this earlier this year. Wouldn't say I didn't like it but was not too crazy about it either

nice do add the gourmet vinegar & dash of sugar

I would add some vinegar, fresh dill instead of the dry/fresh mint, 1 clove of fresh garlic finely minced insead of the powder and a dash of suggar or sweetner.

I like the idea of the dill. Dill was always something my mother added to many of her dishes.

I tried this and it was awful. I took it to a pot luck and no one really liked it. I'm not being mean as I have made many many of these recipes and most are very good.

Sounds good and will give it a try, My recipe has always been to use Miracle Whip diluted with a little milk and a tsp or so of sugar. Adding some tomato chuncks also gives a delightful flavor

I've always made mine with 'lite' sour cream and some 'Half & Half". I "eye-ball" the amoint depending upon how many cucumbers I'm using. I also add a tiny bit of sugar and vinegar. I don't use mint, but I add finely chopped fresh 'dill weed'. It's terrific!

This sounds close to another recipe that uses sourcream. Ill try this next! And ?red onion right?.

Why can't I save a lot of these recipes in my recipe box?

It's good! Best w/ grilled lamb chops!
