Fancy Carrot Salad

Here it is, the perfect neighbor for your potato and macaroni salads! Carrot Salad is a colorful and fresh change of pace from the normal salad line-up. It has a touch of sweetness that makes it team well with anything from burgers to ribs.

Serves: 6

Ingredients

• 6 medium carrots (about 1 pound), shredded
• 1/2 cup raisins
• 3/4 cup mayonnaise
• 2 tablespoons honey
• 1 teaspoon vanilla extract
• 6 romaine lettuce leaves

Instructions

1. In a large bowl, combine all the ingredients except the lettuce; mix well.
    
2. Place the lettuce on a platter and spoon the carrot mixture over the top. Serve immediately, or chill until ready to serve.

Note

For a contemporary twist, substitute sweetened dried cranberries for the raisins, and use baby spinach leaves instead of romaine lettuce.
