Farm Stand Potato Salad

We've mixed up fresh farm stand favorites to come up with Farm Stand Potato Salad. It's definitely a winner.

Serves: 8

Cooking Time: 25 min

Ingredients
  • 10 medium-sized red potatoes (about 3 pounds)
  • 1 (10-ounce) package frozen cut yellow wax beans, thawed and drained
  • 1 (10-ounce) package frozen cut green beans, thawed and drained
  • 1/2 of a medium-sized red onion, coarsely chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Fill a large pot 3/4 full with water and bring to a boil over medium-high heat. Add potatoes and cook 20 to 25 minutes, or until fork-tender. Remove from heat and drain, reserving 1/4 cup cooking liquid. Allow potatoes to cool then cut into 1-inch chunks and set aside.
     
  2. In a large bowl, combine remaining ingredients, including reserved cooking water; mix well. Add potatoes and toss to coat. Cover and chill for at least one hour before serving.
Notes

You can use fresh beans, if you prefer. Just trim, cut in half, and add them to the potatoes for the last 10 minutes of cooking. Drain and proceed as above. And, sure, if you'd rather use all wax beans or all green beans, that'll work, too.
